Lal Shaag or Red Spinach Stir Fry

  • 2 cups of red amaranth leaves, washed and chopped

  • 1 teaspoon of sesame oil
  • 1 teaspoon of sugar

  1. In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, sugar, red pepper flakes, salt and pepper. Set aside.
  2. Heat the oil in a wok or large skillet over high heat.
  3. Once the oil is hot, add the garlic and ginger and stir-fry for a few seconds until fragrant.
  4. Add the red amaranth leaves and stir-fry for 2-3 minutes or until the leaves are wilted.
  5. Add the soy sauce mixture and stir-fry for an additional 1-2 minutes or until the leaves are evenly coated.
  6. Serve the Lal Shaag as a side dish or over rice.
