Rajgira ke Ladoo

Rajgira ke Ladoo, also known as Amaranth Ladoo, are a traditional Indian sweet made from Rajgira flour (Amaranth flour) and typically served during religious fasting or vrat. They are made by cooking Rajgira flour, sugar and ghee together until it forms a dough-like consistency, which is then shaped into small balls.

Here is a simple recipe for Rajgira ke Ladoo:

  • 1 cup Rajgira flour
  • 1 cup ghee
  • 1 cup powdered sugar
  • 1 tsp cardamom powder
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)

  1. In a pan, roast the Rajgira flour over medium heat until it turns golden brown.
  2. Add ghee to the pan and mix well.
  3. Add powdered sugar and cardamom powder, and mix well.
  4. Cook the mixture over medium heat until it thickens and forms a dough-like consistency.
  5. Remove from heat and add chopped nuts, mix well.
  6. Allow the mixture to cool for a few minutes.
  7. Once it’s cool enough to handle, take small portions of mixture and roll them into small balls.
  8. Serve and enjoy!

Note: You can also add some more nuts like raisins, or dried coconut for added flavor and nutrition. Also, you can also add some more ghee to the mixture if it’s too dry.
