Aloo Rice | Easy Aloo rice with Leftover rice | Potato Rice

Aloo Rice, also known as Easy Aloo Rice with Leftover Rice or Potato Rice, is a simple and easy to make dish that combines leftover rice with sautéed potatoes and spices. It’s a simple and comforting dish that can be made with minimal ingredients, and it’s a great way to use up leftover rice. Here is a recipe for how to make Aloo Rice:


  • 2 cups of cooked and cooled rice
  • 1 tablespoon of oil
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon of mustard seeds
  • 2-3 green chilies, chopped
  • 1 teaspoon of grated ginger
  • 1/2 teaspoon of turmeric powder
  • 2 cups of diced potatoes
  • Salt, to taste
  • Fresh cilantro, chopped, for garnish


  1. In a pan, heat the oil over medium heat.
  2. Add the cumin seeds and mustard seeds and let them sizzle for a few seconds.
  3. Add the green chilies and ginger, and sauté for a minute.
  4. Add the turmeric powder and diced potatoes, and sauté for 2-3 minutes, or until the potatoes are slightly tender.
  5. Add the cooked rice and stir well to combine.
