Brinjal Malai Curry, also known as Shahi Malai Baingan or Gutti Vankaya Gravy curry, is a rich and creamy Indian dish made from eggplants and a variety of spices, and a Malai ( Cream) based gravy. It is a popular dish in North India and is typically served with rice or roti. To make this recipe, you will need:

Ingredients:

  • 10-12 small brinjals
  • 1 cup Malai/Heavy Cream
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 tsp ginger, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil
  • Coriander leaves for garnishing

Instructions:

  1. Boil the brinjals in water until they are cooked through, then peel and mash them.
  2. In a pan, heat oil and add the onions, garlic, and ginger. Cook until the onions turn golden brown.
  3. Add the tomatoes, cumin powder, coriander powder, red chili powder, garam masala powder, and salt. Cook for 2-3 minutes.
  4. Add the mashed brinjals and mix well. Cook for 3-4 minutes.
  5. Add the malai/heavy cream and mix well. Cook for 2-3 minutes.
  6. Garnish with coriander leaves and serve hot.
