Brinjal Malai Curry, also known as Shahi Malai Baingan or Gutti Vankaya Gravy curry, is a rich and creamy Indian dish made from eggplants and a variety of spices, and a Malai ( Cream) based gravy. Ingredients:
- 10-12 small brinjals
- 1 cup Malai/Heavy Cream
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 cloves of garlic, finely chopped
- 1 tsp ginger, finely chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- Coriander leaves for garnishing
Instructions:
- Boil the brinjals in water until they are cooked through, then peel and mash them.
- In a pan, heat oil and add the onions, garlic, and ginger. Cook until the onions turn golden brown.
- Add the tomatoes, cumin powder, coriander powder, red chili powder, garam masala powder, and salt. Cook for 2-3 minutes.
- Add the mashed brinjals and mix well. Cook for 3-4 minutes.
- Add the malai/heavy cream and mix well. Cook for 2-3 minutes.
- Garnish with coriander leaves and serve hot.
