Ingredients:

  • 1 cup of grated carrots
  • 1/2 cup of roasted peanuts
  • 2 green chilies
  • 1/2 inch ginger
  • 2 cloves of garlic
  • 1/4 teaspoon of mustard seeds
  • 1/4 teaspoon of cumin seeds
  • Salt, to taste
  • 2 tablespoons of water
  • 1 tablespoon of oil
  • 1 tablespoon of chopped cilantro for garnish

Instructions:

  1. In a blender, grind together the grated carrots, roasted peanuts, green chilies, ginger, garlic, mustard seeds, cumin seeds, salt, and water until smooth.
  2. In a pan, heat the oil over medium heat.
  3. Once the oil is hot, add the chutney mixture and sauté for 2-3 minutes or until the chutney thickens and the raw smell of ginger-garlic is gone.
  4. Remove from heat and let it cool.
