Instant Kesar Kulfi Recipe:
- 1 litre full-fat milk
- 1/2 cup sugar
- 1/4 cup heavy cream
- 1 tsp cardamom powder
- 1 tsp saffron strands
- 1/4 cup chopped nuts (almonds, pistachios) for garnish
- In a large pot, heat the milk on medium-high heat until it comes to a boil.
- Reduce the heat to low and let the milk simmer for about 30 minutes, or until it reduces by about a third.
- Add the sugar, cream, cardamom powder, and saffron strands, and stir well to combine.
- Let the mixture simmer for another 10-15 minutes, or until it thickens.
- Remove from heat and let it cool down. Once the mixture has cooled to room temperature, pour it into kulfi molds or small cups.
- Freeze the molds or cups for at least 4-5 hours, or until the kulfi is set.
- To serve, remove the kulfi from the molds or cups and garnish with chopped nuts.
