Instant Kesar Kulfi Recipe:


  • 1 litre full-fat milk
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1 tsp cardamom powder
  • 1 tsp saffron strands
  • 1/4 cup chopped nuts (almonds, pistachios) for garnish


  1. In a large pot, heat the milk on medium-high heat until it comes to a boil.
  2. Reduce the heat to low and let the milk simmer for about 30 minutes, or until it reduces by about a third.
  3. Add the sugar, cream, cardamom powder, and saffron strands, and stir well to combine.
  4. Let the mixture simmer for another 10-15 minutes, or until it thickens.
  5. Remove from heat and let it cool down. Once the mixture has cooled to room temperature, pour it into kulfi molds or small cups.
  6. Freeze the molds or cups for at least 4-5 hours, or until the kulfi is set.
  7. To serve, remove the kulfi from the molds or cups and garnish with chopped nuts.
