Protein-rich Moringa Dal (Drumstick Leaves with Lentils) Recipe:
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 cup chopped drumstick leaves (moringa leaves)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- Salt to taste
- 2 cups water
- 2 tbsp oil
- 2 tbsp chopped cilantro for garnish
Instructions:
- Rinse the toor dal and soak in water for 30 minutes. Drain the water and keep aside.
- In a pressure cooker, heat the oil over medium heat.
- Add the onion and sauté for 2-3 minutes or until they turn golden brown.
- Add the ginger-garlic paste and sauté for 1-2 minutes until fragrant.
- Add the tomatoes and sauté for 2-3 minutes or until they turn soft.
- Add the drumstick leaves, toor dal, red chili powder, coriander powder, cumin powder, turmeric powder, and salt, and sauté for 1-2 minutes.
- Add the water and stir well.
- Close the lid of the pressure cooker and cook for 2 whistles.
- Once the pressure releases, open the cooker and mash the dal mixture slightly with a ladle.
- Garnish with cilantro and serve hot.
