Rayalaseema Special Brinjal Curry | Nune Vankaya | How to make Brinjal Gravy Curry

Rayalaseema Special Brinjal Curry, also known as Nune Vankaya, is a traditional dish from the Rayalaseema region of Andhra Pradesh, India. It is a spicy and flavorful curry made with small brinjals and a special masala paste.

Ingredients:

  • 1/2 kg small brinjals (eggplants)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 tsp fenugreek seeds
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp tamarind paste
  • Salt to taste
  • 1/4 cup chopped cilantro for garnish

For the masala paste:

  • 2 tbsp chana dal
  • 2 tbsp coriander seeds
  • 2 tbsp sesame seeds
  • 2 tbsp peanuts
  • 2 dried red chilies
  • 2 cloves of garlic
  • 1 inch ginger
  • 2 tbsp grated coconut

Instructions:

  1. Cut the brinjals into halves or quarters, keeping the stem intact.
  2. In a pan, dry roast the chana dal, coriander seeds, sesame seeds, peanuts, and dried red chilies until they release a nice aroma. Allow them to cool.
