Rayalaseema Special Brinjal Curry, also known as Nune Vankaya, is a traditional dish from the Rayalaseema region of Andhra Pradesh, India. It is a spicy and flavorful curry made with small brinjals and a special masala paste.
Ingredients:
- 1/2 kg small brinjals (eggplants)
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 1 tsp fenugreek seeds
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp tamarind paste
- Salt to taste
- 1/4 cup chopped cilantro for garnish
For the masala paste:
- 2 tbsp chana dal
- 2 tbsp coriander seeds
- 2 tbsp sesame seeds
- 2 tbsp peanuts
- 2 dried red chilies
- 2 cloves of garlic
- 1 inch ginger
- 2 tbsp grated coconut
Instructions:
- Cut the brinjals into halves or quarters, keeping the stem intact.
- In a pan, dry roast the chana dal, coriander seeds, sesame seeds, peanuts, and dried red chilies until they release a nice aroma. Allow them to cool.
