Ingredients:
- 1 medium-sized ridged gourd (peeled and grated)
- 2-3 eggs
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- Salt and pepper to taste
- 2 tbsp oil
- Coriander leaves for garnishing
Instructions:
- In a pan, heat oil and add the onions, green chilies, and ginger-garlic paste. Cook until the onions turn golden brown.
- Add the tomatoes and cook until they turn mushy.
- Add the grated ridged gourd and mix well. Cook until the gourd turns soft.
- Add the cumin powder, coriander powder, and garam masala powder and mix well. Cook for 2-3 minutes.
- Whisk the eggs in a separate bowl and add them to the pan. Scramble the eggs with the masala and cook until they are fully set.
- Season with salt and pepper to taste.
- Garnish with coriander leaves and serve hot with roti or rice.
