Ridged Gourd Scrambled Eggs, also known as Turai Egg Bhurji Masala, Beerakaya Egg Burji, or Peerkangai Muttai Poriyal, is a delicious and flavorful dish made from ridged gourd and scrambled eggs. To make this recipe, you will need:

Ingredients:

  • 1 medium-sized ridged gourd (peeled and grated)
  • 2-3 eggs
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt and pepper to taste
  • 2 tbsp oil
  • Coriander leaves for garnishing

Instructions:

  1. In a pan, heat oil and add the onions, green chilies, and ginger-garlic paste. Cook until the onions turn golden brown.
  2. Add the tomatoes and cook until they turn mushy.
  3. Add the grated ridged gourd and mix well. Cook until the gourd turns soft.
  4. Add the cumin powder, coriander powder, and garam masala powder and mix well. Cook for 2-3 minutes.
  5. Whisk the eggs in a separate bowl and add them to the pan. Scramble the eggs with the masala and cook until they are fully set.
  6. Season with salt and pepper to taste.
  7. Garnish with coriander leaves and serve hot with roti or rice.
