Ingredients:

  • 2 cups of rice
  • 4 cups of water
  • 3-4 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions:

  1. Wash the rice and soak it in water for 30 minutes. Drain the water and set it aside.
  2. Heat oil in a pan over medium heat. Once hot, add the mustard seeds and cumin seeds and wait for them to crackle.
  3. Add the chopped onions and green chilies and sauté until the onions are translucent.
  4. Add the chopped tomatoes, turmeric powder, and salt. Mix well and cook for 2-3 minutes until the tomatoes are soft.
  5. Add the soaked rice and 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover and cook for 15-20 minutes or until the rice is cooked through.
  6. Once done, garnish with fresh cilantro and serve hot.
