Uggani, also known as Rayalaseema Kurnool Special Uggani, Vaggani, is a traditional Andhra dish made with puff rice. It is a popular street food in the Kurnool district and is known for its spicy and flavorful taste. Here’s a recipe for making Uggani:
Ingredients:
- 3 cups puff rice (kurmura)
- 1/4 cup peanuts
- 1/4 cup chana dal
- 1/4 cup urad dal
- 1/4 cup finely chopped onion
- 2 green chilies, finely chopped
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp chana dal
- 1 tsp urad dal
- 1 tsp red chili powder
- Salt, to taste
- 2 tbsp chopped coriander leaves
Instructions:
- In a pan, dry roast the peanuts until golden brown. Remove from the pan and keep aside.
- In the same pan, dry roast the chana dal and urad dal until golden brown. Remove from the pan and keep aside.
- In a large bowl, add the puff rice, peanuts, chana dal and urad dal, chopped onion, green chilies and mix well.
- Heat oil in a pan, add mustard seeds, cumin seeds, chana dal and urad dal. Once they start to splutter, add the puff rice mixture and sauté for 2-3 minutes.
- Add red chili powder, salt and chopped coriander leaves and mix well.
- Cook for 2-3 minutes or until the puff rice is heated through.
- Serve hot as a snack or breakfast.
