Uggani | Rayalaseema Kurnool Special Uggani | Vaggani | Tossed Puff Rice

Uggani, also known as Rayalaseema Kurnool Special Uggani, Vaggani, is a traditional Andhra dish made with puff rice. It is a popular street food in the Kurnool district and is known for its spicy and flavorful taste. Here’s a recipe for making Uggani:

Ingredients:

  • 3 cups puff rice (kurmura)
  • 1/4 cup peanuts
  • 1/4 cup chana dal
  • 1/4 cup urad dal
  • 1/4 cup finely chopped onion
  • 2 green chilies, finely chopped
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp red chili powder
  • Salt, to taste
  • 2 tbsp chopped coriander leaves

Instructions:

  1. In a pan, dry roast the peanuts until golden brown. Remove from the pan and keep aside.
  2. In the same pan, dry roast the chana dal and urad dal until golden brown. Remove from the pan and keep aside.
  3. In a large bowl, add the puff rice, peanuts, chana dal and urad dal, chopped onion, green chilies and mix well.
  4. Heat oil in a pan, add mustard seeds, cumin seeds, chana dal and urad dal. Once they start to splutter, add the puff rice mixture and sauté for 2-3 minutes.
  5. Add red chili powder, salt and chopped coriander leaves and mix well.
  6. Cook for 2-3 minutes or until the puff rice is heated through.
  7. Serve hot as a snack or breakfast.
