Andhra Allam Pachadi | Ginger Chutney

Andhra Allam Pachadi, also known as Ginger Chutney, is a popular Indian condiment from the Andhra Pradesh region of India. It is made with ginger, green chili, tamarind, and jaggery, and is typically served as a dip or accompaniment with meals such as idli, dosa, or rice.

Here is a basic recipe for Andhra Allam Pachadi:

Ingredients:

  • 1 cup of grated ginger
  • 1/4 cup of tamarind paste
  • 1/4 cup of jaggery
  • 2-3 green chilies
  • Salt, to taste
  • 1 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp cumin seeds
  • 2-3 dried red chilies
  • 1 tsp urad dal
  • 3-4 curry leaves

Instructions:

  1. Heat oil in a pan, add mustard seeds, chana dal, urad dal, cumin seeds, dried red chilies, urad dal, curry leaves and sauté till the dals turn golden brown.
  2. Add grated ginger, green chilies, sauté for 2 minutes.
  3. Add tamarind paste and jaggery, stir well
