Here is a recipe for Egg Cubes Masala:
- 6 eggs
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 10 curry leaves
- Hard boil the eggs and remove the shells. Cut the eggs into small cubes and set aside.
- Heat oil in a pan and add the mustard seeds, cumin seeds, urad dal, chana dal and curry leaves. Once they start to splutter, add in the ginger, garlic, and green chilies.
- Add the onions and sauté until they turn translucent.
- Add the tomatoes and sauté until they become soft and mushy.
- Add the red chili powder, coriander powder, cumin powder, and turmeric powder. Cook for a few seconds.
- Add the egg cubes and stir well.
- Add enough water to get the desired consistency and bring it to a boil.
- Reduce the heat and let it simmer for 5-7 minutes.
- Season the curry with salt to taste.
