Rajgara ni Kadhi is a traditional Indian dish made with Rajgara flour (amaranth flour) and yogurt, typically served during fasting days. The dish is typically made with a mixture of spices and is often served as a side dish or as a main course. The kadhi is thickened with Rajgara flour, which is made from ground amaranth seeds. Here is a basic recipe for making Rajgara ni Kadhi:
Ingredients:
- 2 cups of yogurt
- 1/2 cup of Rajgara flour
- 2 cups of water
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp ginger paste
- 1 tsp green chili paste
- Salt to taste
- 2 tbsp oil
- 2 tbsp chopped cilantro for garnish
Instructions:
- Mix the Rajgara flour in 2 cups of water to make a smooth paste.
- In a pan, heat oil over medium heat. Once hot, add cumin seeds and mustard seeds.
- When the seeds start to crackle, add ginger paste, green chili paste, and sauté for a minute.
- Add the Rajgara flour paste and stir well, cook for 2 minutes.
- Slowly pour in the yogurt and stir continuously to avoid curdling.
- Add salt to taste and bring it to boil. Reduce the heat and let it simmer for 10-15 minutes or until thickened.
- Once done, switch off the flame and garnish with chopped cilantro.
- Serve hot with steamed rice or any fasting food.
Note: You can add some chopped vegetables like bottle gourd, cucumber or drumstick for more nutrition and flavor. Adjust the amount of green chilies and ginger as per your preference.
