Semiya Pulihora, also known as Vermicelli Lemon Pulihora, is a traditional South Indian dish made with thin vermicelli noodles and a tangy lemon-based seasoning. The dish is typically made with a mixture of spices, peanuts, and curry leaves, and is often served as a side dish or as a main course. The addition of lemon juice gives the dish a unique and refreshing flavor. It is often served during festive occasions and is a popular dish in Andhra Pradesh and Telangana.
Here is a basic recipe for cooking Semiya Pulihora:
Ingredients:
- 1 cup vermicelli noodles
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 10-12 curry leaves
- 1/4 cup peanuts
- 2 green chilies, chopped
- 2 tbsp fresh grated coconut (optional)
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp lemon juice
- 2 tbsp chopped cilantro for garnish
Instructions:
- Heat oil in a pan over medium heat. Once hot, add mustard seeds, cumin seeds, urad dal, chana dal and curry leaves.
- When the seeds start to crackle, add peanuts, green chilies and grated coconut. Cook for a minute.
- Add turmeric powder and sauté for another minute.
- Add vermicelli noodles, salt to taste and stir well.
- Add 2 cups of water and bring it to a boil.
- Reduce heat and cover the pan with a lid. Cook until the vermicelli is soft and all the water is absorbed.
- Once done, switch off the flame and add lemon juice. Mix well.
- Garnish with chopped cilantro.
- Serve hot.
Note: The recipe can be adjusted to personal taste by adding or reducing the amount of lemon juice, green chillies, and peanuts.
