To make Amaranth (Rajgira) Cake with Apricots & Orange Zest, you will need:

  • 1 1/2 cups amaranth flour (Rajgira atta)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter or coconut oil, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup yogurt or buttermilk
  • 1/2 cup chopped dried apricots
  • 1 tsp grated orange zest

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine the amaranth flour, baking powder, baking soda, and salt. Mix well.
  3. In a separate bowl, beat the butter or coconut oil and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the yogurt or buttermilk. Mix until just combined.
  6. Fold in the chopped apricots and orange zest.
