Amaranth Saag

Amaranth Saag is a popular dish from India and Pakistan, made with amaranth leaves, also known as “Rajgira” in Hindi, and other vegetables. It is a nutritious and delicious dish that is commonly served with rice or Indian flatbreads.

To make Amaranth Saag, you will need:

  • 1 bunch of fresh amaranth leaves (rajgira), washed and chopped
  • 1/2 cup spinach leaves, washed and chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, minced
  • 1 tomato, finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil or ghee


  1. In a pan, heat oil or ghee over medium heat. Add cumin seeds and allow them to crackle.
  2. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  3. Add the chopped tomato, turmeric powder, red chili powder, and salt. Stir and cook for a few minutes until the tomato is soft.
  4. Add the chopped amaranth leaves and spinach, and mix well.
  5. Cover and cook for 10-15 minutes or until the leaves are wilted and tender.
  6. Serve hot with rice or Indian flatbreads.

You can adjust the amount of spices and seasoning according to your taste. You can also add other vegetables like potatoes, carrots, or okra to make it more nutritious. Enjoy your Amaranth Saag!
