Dates & Rajgira Chikki is a traditional Indian sweet snack made with a mixture of dates and Rajgira flour (amaranth flour) as the main ingredients. Chikki is also known as brittle and it is a popular sweet dish in India, which is enjoyed by people of all ages.
Here is a recipe for making Dates & Rajgira Chikki:
Ingredients:
- 1 cup chopped dates
- 1/2 cup Rajgira flour
- 1/2 cup jaggery
- 1 tablespoon ghee
- 1/4 teaspoon cardamom powder
- 1/4 cup chopped nuts of your choice (optional)
Instructions:
- In a pan, heat the ghee over medium heat. Once the ghee is hot, add the chopped dates and sauté for a couple of minutes.
- Add the Rajgira flour and sauté for 2-3 minutes.
- Add the jaggery and mix well until it is completely dissolved.
- Add cardamom powder and chopped nuts (if using) and mix well.
- Cook for 2-3 more minutes or until the mixture becomes thick.
- Spread the mixture evenly on a greased plate and press it with a greased rolling pin.
- Allow it to cool completely.
- Once cooled, break it into small pieces.
- Serve the Dates & Rajgira Chikki as a sweet snack.
Note: You can also add some saffron strands for a rich flavor or some dry fruits of your choice. You can also add some ghee or butter for a richer taste.
