Minty Rajgira Potato Sticks

  • 2 cups boiled and mashed potatoes
  • 1/2 cup rajgira flour (amaranth flour)
  • 1/4 cup mint leaves, finely chopped
  • 2 tablespoons corn starch
  • Salt and pepper to taste
  • Oil for frying


  1. In a mixing bowl, combine the mashed potatoes, rajgira flour, mint leaves, corn starch, salt, and pepper. Mix well until the ingredients are well combined.
  2. Divide the mixture into small portions and shape them into sticks.
  3. Heat oil in a pan for frying.
  4. Once the oil is hot, gently place the sticks into the pan. Fry them until they turn golden brown and crispy.
  5. Once done, remove the sticks from the pan and place them on a paper towel to remove the excess oil.
  6. Serve hot with mint chutney or tomato ketchup.

You can also bake the sticks in an oven preheated at 180 degree Celsius for 15-20 minutes to make them healthy.
