Rajgira ki kheer

Rajgira ki Kheer is a sweet pudding made from Amaranth flour (Rajgira atta) and is commonly consumed during fasting periods in India. It’s a delicious and nutritious dessert that can be enjoyed any time of the year.

To make Rajgira ki Kheer, you will need:

  • 1 cup Rajgira flour (amaranth flour)
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 cup ghee or clarified butter
  • 1/4 tsp cardamom powder
  • A few saffron strands (optional)
  • A few chopped almonds and raisins (optional)

Instructions:

  1. In a pan, heat ghee or clarified butter over medium heat.
  2. Add Rajgira flour and roast until it turns golden brown and fragrant.
  3. Gradually add milk and stir continuously until the mixture comes together and thickens.
  4. Add sugar, cardamom powder, saffron strands (if using), and continue to stir until the mixture thickens.
  5. Add chopped almonds and raisins (if using) and mix well.
  6. Cook for a few more minutes until the kheer reaches your desired consistency.
  7. Serve hot or warm.
