Rajgira Kuttu Samosas

Rajgira Kuttu Samosas are a delicious and healthy variation of traditional samosas made with Rajgira flour (Amaranth flour) and kuttu flour (buckwheat flour) as the main ingredients. These samosas are typically consumed during religious fasting periods such as vrat (Hindu fasting days) when certain foods are avoided.

Here is a recipe for making Rajgira Kuttu Samosas:

Ingredients for crust:

  • 1 cup Rajgira flour
  • 1/2 cup kuttu flour
  • 1/4 teaspoon salt
  • 1/4 cup ghee
  • Water, as needed

Ingredients for filling:

  • 2 cups boiled and mashed potatoes
  • 1/4 cup finely chopped green peas
  • 1/4 cup finely chopped onions
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon red chili powder
  • Salt, to taste
  • Oil, for deep frying

Instructions:

  1. In a mixing bowl, combine the Rajgira flour, kuttu flour, salt, and ghee. Mix well and add water as needed to form a smooth dough.
  2. Knead the dough for a couple of minutes to make it smooth and pliable. Cover it and let it rest for 15-20 minutes.
  3. In another mixing bowl, combine the mashed potatoes, green peas, onions, cumin powder, coriander powder, red chili powder, and salt. Mix well to form the filling.
  4. Divide the dough into small portions and shape them into small balls.
  5. Roll out each ball
