Ingredients:
- 1 head of broccoli, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of blanched almonds
- 4 cups of vegetable or chicken stock
- 1 tsp olive oil
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the onions and garlic and sauté for a few minutes until they are translucent.
- Add the broccoli and sauté for a few minutes.
- Blend the blanched almonds and add it to the pot.
- Pour in the stock and bring the soup to a boil.
