Amaranth Saag, also known as Harive Soppu Saag, is a healthy and nutritious dish that is typically made with amaranth leaves, also known as hariyali saag. This dish is typically made with a combination of leafy greens, spices and sometimes with addition of grated paneer, or other ingredients like ginger, garlic, or onions. It is a great dish for kids as it is packed with nutrients and vitamins.
- 2 cups of fresh amaranth leaves (Harive soppu)
- 1/4 cup grated paneer (optional)
- 1/4 cup of chopped onion
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt, to taste
- 1 tbsp oil
- In a pan, heat oil over medium heat. Add cumin seeds, mustard seeds, and onion and sauté for a few minutes.
- Add the amaranth leaves and sauté for a few minutes.
- Add the turmeric powder, red chili powder, and salt. Stir well.
- Cover the pan and cook for 5-7 minutes or until the amaranth leaves are wilted.
- Add the grated paneer (if using) and mix well.
- Serve the Amaranth Saag with roti or rice.
