Carrot beans stir fry/thoran

Ingredients:

  • 1 lb carrots, peeled and diced
  • 1 lb green beans, trimmed and chopped
  • 1/2 cup grated coconut
  • 1 tsp mustard seeds
  • 2-3 dried red chilies
  • 2-3 curry leaves
  • 1 tsp oil
  • Salt, to taste

Instructions:

  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add dried red chilies and curry leaves, and sauté for a few seconds.
  3. Add diced carrots and green beans, and stir-fry for a few minutes.
  4. Add grated coconut, and stir-fry for another 2-3 minutes, or until the vegetables are tender.
  5. Add salt to taste and mix well.
  6. Serve hot with rice.

Note: You can adjust the spices and salt as per your taste preference.
