Ingredients:
- 1 lb carrots, peeled and diced
- 1 lb green beans, trimmed and chopped
- 1/2 cup grated coconut
- 1 tsp mustard seeds
- 2-3 dried red chilies
- 2-3 curry leaves
- 1 tsp oil
- Salt, to taste
Instructions:
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add dried red chilies and curry leaves, and sauté for a few seconds.
- Add diced carrots and green beans, and stir-fry for a few minutes.
- Add grated coconut, and stir-fry for another 2-3 minutes, or until the vegetables are tender.
- Add salt to taste and mix well.
- Serve hot with rice.
