Cauliflower Stuffed Capsicum

Cauliflower Stuffed Capsicum is a delicious dish that combines the flavors of cauliflower and capsicum, also known as bell pepper. The capsicums are hollowed out and stuffed with a mixture of cooked cauliflower, spices, and sometimes other ingredients such as cheese, breadcrumbs, or ground meat. This dish can be baked or grilled, and it’s often served as a side dish or as a main course.


  • 4 capsicums (bell peppers), any color
  • 1 small head of cauliflower, chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • Salt, to taste
  • 2 tbsp oil
  • 1/4 cup grated cheese (optional)
  • 1/4 cup breadcrumbs (optional)


  1. Preheat the oven to 375°F (190°C).
  2. Cut the capsicums in half lengthwise and remove the seeds and membranes. Keep the capsicums aside.
  3. In a pan, heat oil over medium heat. Add onion and garlic and sauté for a few minutes.
  4. Add the cauliflower, cumin powder, coriander powder, garam masala powder, and salt. Stir well and cook for 5-7 minutes or until the cauliflower is tender.
  5. Remove from heat and let the mixture cool.
  6. Once the mixture is cooled, add cheese and breadcrumbs (if using) and mix well.
  7. Stuff the capsicums with the cauliflower mixture.
  8. Place the stuffed capsicums in a baking dish and bake for 25-30 minutes or until the capsicums are tender and the cheese is melted and bubbly.
  9. Serve hot with rice or roti.

Note: You can also grill the stuffed capsicums on the grill. To do this, preheat the grill to medium-high heat and place the stuffed capsicums on the grill. Grill for 8-10 minutes on each side or until the capsicums are tender and the cheese is melted and bubbly.
