Cauliflower Stuffed Capsicum is a delicious dish that combines the flavors of cauliflower and capsicum, also known as bell pepper. The capsicums are hollowed out and stuffed with a mixture of cooked cauliflower, spices, and sometimes other ingredients such as cheese, breadcrumbs, or ground meat. This dish can be baked or grilled, and it’s often served as a side dish or as a main course.
Ingredients:
- 4 capsicums (bell peppers), any color
- 1 small head of cauliflower, chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- Salt, to taste
- 2 tbsp oil
- 1/4 cup grated cheese (optional)
- 1/4 cup breadcrumbs (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the capsicums in half lengthwise and remove the seeds and membranes. Keep the capsicums aside.
- In a pan, heat oil over medium heat. Add onion and garlic and sauté for a few minutes.
- Add the cauliflower, cumin powder, coriander powder, garam masala powder, and salt. Stir well and cook for 5-7 minutes or until the cauliflower is tender.
- Remove from heat and let the mixture cool.
- Once the mixture is cooled, add cheese and breadcrumbs (if using) and mix well.
- Stuff the capsicums with the cauliflower mixture.
- Place the stuffed capsicums in a baking dish and bake for 25-30 minutes or until the capsicums are tender and the cheese is melted and bubbly.
- Serve hot with rice or roti.
Note: You can also grill the stuffed capsicums on the grill. To do this, preheat the grill to medium-high heat and place the stuffed capsicums on the grill. Grill for 8-10 minutes on each side or until the capsicums are tender and the cheese is melted and bubbly.
