Ingredients:
- 2 cups of dosa batter
- 2 cups of saag (spinach or mustard greens)

- 1 inch ginger, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt, to taste

Instructions:
- Heat a non-stick skillet over medium-high heat.
- Pour a ladleful of batter in the skillet and spread it out into a thin circle.
- Cook the dosa until the bottom is golden brown and the top appears dry, then flip it over and cook the other side.
- Repeat with remaining batter.
- In a separate pan, heat oil over medium heat. Add onions and sauté until they turn translucent.
- Add ginger and garlic, and sauté for a few seconds.
- Add cumin powder, coriander powder, turmeric powder, and cook for a minute.
- Add diced carrots and saag, and cook until the vegetables are tender.
- Add salt to taste and mix well.
- Garnish with cilantro and serve hot with dosa.
