Ingredients:

  • 2 cups of dosa batter
  • 2 cups of saag (spinach or mustard greens)
  • 1/2 cup diced carrots
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt, to taste
  • 2 tbsp oil
  • Cilantro, for garnish

Instructions:

  1. Heat a non-stick skillet over medium-high heat.
  2. Pour a ladleful of batter in the skillet and spread it out into a thin circle.
  3. Cook the dosa until the bottom is golden brown and the top appears dry, then flip it over and cook the other side.
  4. Repeat with remaining batter.
  5. In a separate pan, heat oil over medium heat. Add onions and sauté until they turn translucent.
  6. Add ginger and garlic, and sauté for a few seconds.
  7. Add cumin powder, coriander powder, turmeric powder, and cook for a minute.
  8. Add diced carrots and saag, and cook until the vegetables are tender.
  9. Add salt to taste and mix well.
  10. Garnish with cilantro and serve hot with dosa.
