Fenugreek leaves and carrot potato veggies

Ingredients:

  • 2 cups chopped fenugreek leaves (methi)
  • 2 cups grated carrots
  • 2 cups boiled and diced potatoes
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 1 tbsp finely chopped coriander leaves
  • 1 cup water or as needed

Instructions:

  1. In a pan, heat oil over medium heat.
  2. Add cumin seeds and let them sizzle.
  3. Add ginger-garlic paste and sauté for a few seconds.
  4. Add chopped fenugreek leaves, grated carrots, boiled potatoes, turmeric powder, red chili powder, coriander powder, and salt.
  5. Stir fry for about 2-3 minutes.
  6. Add water and bring it to a boil. Reduce the heat to low and let it simmer for about 10-15 minutes or until the vegetables are cooked.
  7. Add coriander leaves and mix well.
  8. Serve hot as a side dish with rice or roti. Enjoy!
