Ingredients:
- 2 cups grated carrots
- 1 cup green peas (fresh or frozen)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp ginger-garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala powder
- Salt to taste
- 1 tbsp finely chopped coriander leaves
- 1 cup water or as needed
Instructions:
- In a pan, heat oil over medium heat.
- Add cumin seeds and let them sizzle.
- Add ginger-garlic paste and sauté for a few seconds.
- Add grated carrots, green peas, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt.
- Stir fry for about 2-3 minutes.
- Add water and bring it to a boil. Reduce the heat to low and let it simmer for about 10-15 minutes or until the vegetables are cooked.
- Add coriander leaves and mix well.
- Serve hot as a side dish with rice or roti. Enjoy!
