Ingredients:
- 2 cups whole wheat flour
- 1/2 cup grated radish

- 1/2 teaspoon red chili powder
- Salt, to taste
- Oil, for cooking
Instructions:
- In a large mixing bowl, combine the whole wheat flour, grated radish, chopped fenugreek leaves, cumin powder, coriander powder, red chili powder, and salt.
- Slowly add water and knead the dough until it becomes smooth and elastic.
- Cover the dough and let it rest for at least 30 minutes.
- Divide the dough into equal portions and roll them out into circles.
- Heat a griddle or tawa over medium heat.
- Place the rolled out dough on the griddle and cook for a minute on one side.
- Flip it over and apply some oil on the cooked side.
- Flip it again and cook until brown spots appear on both sides.
- Repeat the process with the remaining dough.
For Gobhi Matar Sabji: Ingredients:
- 1 small cauliflower, broken into florets
- 1 cup peas
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon ginger-garlic paste
- Salt, to taste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- A handful of chopped cilantro for garnish
Instructions:
- Heat oil in a pan over medium heat.
- Add cumin seeds, mustard seeds and let them crackle.
- Add the chopped onion and sauté until it turns golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add the chopped tomato and cook until it turns mushy.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a minute.
- Add the cauliflower florets and peas, and mix well.
- Add 1/2 cup of water, cover and cook until the vegetables are tender.
- Garnish with chopped cilantro and serve hot with Mooli Methi Paratha.
For Gajar Achar: Ingredients:
- 3 cups grated carrots
- 1 cup mustard oil
- 1/2 cup vinegar
- 1/4 cup mustard seeds
- 1/4 cup fenugreek seeds
- 2 tablespoons red chili powder
- 2 tablespoons turmeric powder
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- Salt, to taste
Instructions:
- In a pan, heat mustard oil over medium heat.
- Add mustard seeds and fenugreek seeds and sauté until they crackle.
- Add grated carrots, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for 5-7 minutes.
- Add vinegar and cook for another 5-7 minutes.
- Turn off the heat and let the mixture cool completely.
- Once cooled, transfer the mixture to a sterilized glass jar and store in a cool, dry place. It will be ready to use in a week.
