Mooli Methi Paratha with Gobhi Matar Sabji and Gazar Aachar

Mooli Methi Paratha is a traditional North Indian dish made with grated radish and chopped fenugreek leaves stuffed inside a wheat flour dough and then cooked on a griddle. Gobhi Matar Sabzi is a simple dish made with cauliflower and peas cooked with Indian spices. Gajar Achar is a sweet and tangy pickle made with grated carrots, mustard seeds and other spices.

Here is a recipe for Mooli Methi Paratha:

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup grated radish
  • 1/4 cup chopped fenugreek leaves
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • Oil, for cooking

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour, grated radish, chopped fenugreek leaves, cumin powder, coriander powder, red chili powder, and salt.
  2. Slowly add water and knead the dough until it becomes smooth and elastic.
  3. Cover the dough and let it rest for at least 30 minutes.
  4. Divide the dough into equal portions and roll them out into circles.
  5. Heat a griddle or tawa over medium heat.
  6. Place the rolled out dough on the griddle and cook for a minute on one side.
  7. Flip it over and apply some oil on the cooked side.
  8. Flip it again and cook until brown spots appear on both sides.
  9. Repeat the process with the remaining dough.

For Gobhi Matar Sabji: Ingredients:

  • 1 small cauliflower, broken into florets
  • 1 cup peas
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon ginger-garlic paste
  • Salt, to taste
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • A handful of chopped cilantro for garnish

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds, mustard seeds and let them crackle.
  3. Add the chopped onion and sauté until it turns golden brown.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add the chopped tomato and cook until it turns mushy.
  6. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a minute.
  7. Add the cauliflower florets and peas, and mix well.
  8. Add 1/2 cup of water, cover and cook until the vegetables are tender.
  9. Garnish with chopped cilantro and serve hot with Mooli Methi Paratha.

For Gajar Achar: Ingredients:

  • 3 cups grated carrots
  • 1 cup mustard oil
  • 1/2 cup vinegar
  • 1/4 cup mustard seeds
  • 1/4 cup fenugreek seeds
  • 2 tablespoons red chili powder
  • 2 tablespoons turmeric powder
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • Salt, to taste

Instructions:

  1. In a pan, heat mustard oil over medium heat.
  2. Add mustard seeds and fenugreek seeds and sauté until they crackle.
  3. Add grated carrots, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for 5-7 minutes.
  4. Add vinegar and cook for another 5-7 minutes.
  5. Turn off the heat and let the mixture cool completely.
  6. Once cooled, transfer the mixture to a sterilized glass jar and store in a cool, dry place. It will be ready to use in a week.
