Shakarkand Paratha with Cucumber raita

Shakarkand Paratha is a traditional Indian dish made with sweet potatoes or Shakarkand, which are also known as yams. The sweet potato is grated and mixed with spices and wheat flour to make the dough. The dough is then rolled out and cooked on a griddle to make parathas. This dish is typically served with a side of yogurt-based condiment called raita, which is a popular Indian side dish made by mixing yogurt with various vegetables or fruits.

Ingredients for Shakarkand Paratha:

  • 2 cups grated sweet potatoes (shakarkand)
  • 1 cup wheat flour
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt, to taste
  • Oil, for cooking

Ingredients for Cucumber Raita:

  • 1 cup plain yogurt
  • 1/2 cup grated cucumber
  • 1 tsp cumin powder
  • Salt, to taste
  • 2 tbsp chopped coriander leaves

Instructions for Shakarkand Paratha:

  1. In a mixing bowl, combine the grated sweet potatoes, wheat flour, cumin powder, coriander powder, red chili powder, and salt. Mix well and knead to form a dough.
  2. Divide the dough into small balls.
  3. Roll out each ball into a circle using a rolling pin.
  4. Heat a griddle or tawa over medium heat.
  5. Once the griddle is hot, place the rolled out dough on it and cook for a minute or until small bubbles appear on the surface.
  6. Flip the paratha and cook on the other side for another minute or until golden brown.
  7. Apply oil on both sides and cook for a few seconds.
  8. Repeat the process for the remaining dough.

Instructions for Cucumber Raita:

  1. In a mixing bowl, combine the yogurt, grated cucumber, cumin powder, salt, and coriander leaves. Mix well.
  2. Chill the raita for at least 30 minutes before serving.
  3. Serve the Shakarkand Paratha with Cucumber Raita.

Note: You can also add finely chopped green chilies or ginger to the dough for added flavor. You can also add other vegetables like grated carrots, beetroot, or boondi to the Raita for added texture and taste.
