Vrat wali Idli Sambhar

Vrat Wali Idli Sambhar is a traditional Indian dish that is typically made during fasting periods such as Navratri. It is made with a special type of idli batter that uses ingredients that are allowed during the fast, such as singhare ka atta (water chestnut flour) and rajgira atta (amaranth flour) instead of regular rice flour. The idlis are usually served with sambhar, a lentil-based stew made with vegetables and spices.

Ingredients for Vrat Wali Idli:

  • 1 cup singhare ka atta (water chestnut flour)
  • 1 cup rajgira atta (amaranth flour)
  • 1 tsp cumin seeds
  • 1 tsp black pepper powder
  • Salt, to taste
  • Water, as needed

Ingredients for Sambhar:

  • 1 cup toor dal (split pigeon peas)
  • 1 cup mixed vegetables (such as eggplant, okra, tomatoes, drumstick)
  • 2 tsp sambhar powder
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 dry red chilies
  • 1 tsp tamarind paste
  • Salt, to taste
  • 2 tbsp oil

Instructions for Vrat Wali Idli:

  1. In a mixing bowl, combine the singhare ka atta, rajgira atta, cumin seeds, black pepper powder, salt and add enough water to make a batter. Mix well and let it rest for 2-3 hours.
  2. Grease the idli plates with oil and pour the batter into the plates.
  3. Steam the idlis for 8-10 minutes or until they are cooked through.
  4. Once the idlis are cooked, remove them from the steamer and let them cool.
  5. Once they are cool, gently remove the idlis from the plates and serve.

Instructions for Sambhar:

  1. In a pressure cooker, cook the toor dal with 2 cups of water, turmeric powder and salt until soft.
  2. Heat the oil in a pan. Add the mustard seeds, cumin seeds, and dry red chilies, let them crackle.
  3. Add the vegetables and sauté for 2-3 minutes.
  4. Add the sambhar powder, tamarind paste and sauté for another minute.
  5. Add the cooked dal, 2 cups of water and bring it to a boil.
  6. Simmer for 5-7 minutes or until the vegetables are cooked and the sambhar is thickened.
  7. Serve the Vrat Wali Idli with Sambhar.

Note: You can also add other vegetables like pumpkin, bottle gourd, or yam to the sambhar. And also you can adjust the spices according to your preference.
